
My sister B is home from the hospital. My mom and littlest sisters drove out today to be with her. Sounds like everything's going to be okay. Her side had been causing her bad pain for a long time, so it's good to finally find out the reason and take care of it.
ANYWAY.
In the continuing theme of food today, this afternoon I created a cheese ball. I brought it with me to Huntington for nerdy good times and it seems to be going down well among my friends. Here is sort of the recipe. (I'm not exact on some of the measurements.) I've been wanting to make a cheese ball for awhile (don't ask me why), so I did. I read a bunch of recipes and basically made up my own from what sounded good and what we had in the house.
The spices are pretty strong, especially the garlic because I loooove garlic, so you might want to cut back on those some.
2 (8 oz.) packages cream cheese
3 cups (plus a little more) fancy shredded sharp cheddar
4 tablespoons parsley flakes
2 tablespoons onion powder
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon pepper
Plus we had some left over bacon bits in the fridge from making broccol salad, so I tossed that in. It was probably about 1/4 cup, but you can totally use more. Or none.
Anyway, I squished it all up in a bowl for a long time until my hands were INCREDIBLY greasy and everything seemed well-mixed. Then I made it into two balls because it seemed really big for just one. We had some pecan pieces leftover from another thing, so I toasted those in an ungreased frying pan on high heat until fragrant, then let them cool and rolled the cheeseball in them. I only had enough nuts for one of the balls (hehehehehehehehe, I just said both "nuts" and "balls" in the SAME SENTENCE). So anyway, you'll probably want more than 1/2 cup or so, which I think is what I had. Leave it in the fridge for a few hours (or a day, which what I should have done) to let the flavors all mix it up together in order to create a party in your mouth.
Anyway. IS GOOD CHEESE BALL. I'm using very thick wheat-type crackers to hold up under the weight.
