BAKING IS FUN

Sometimes I just go on a cooking rampage and make a whole bunch of stuff and spend all afternoon and evening in the kitchen and then my feet hurt and I'm tired and I don't do the dishes like a total cad.

Today I made:



Gingerbread! The recipe is from my sugar-free cookbook, though it does have molasses in it, and I used evaporated cane juice and fructose instead of stevia or barley malt like that cookbook always calls for. I made it with whole-grain spelt flour and more spice than the recipe called for, yet it wasn't overpoweringly spicy. I baked this basically because I still have whipped cream left over Thanksgiving and I thought gingerbread sounded tasty with whipped cream. It was! I cut out the center piece because it sank after I let the cake cool--it should have baked for ten more minutes, probably, though the knife I stuck in it came out clean enough. The piece was slightly doughy, but absolutely delicious. Mmm, real whipped cream.



I made two recipes of homemade pizza dough. This one is all white whole wheat, with a little semolina flour for elasticity, and I put mixed Italian seasonings and little Parmesan cheese into the dough for flavor. I'm getting pretty good at making homemade pizza. The reason it looks like a butt is because I split the recipe in two when I deflated the dough for a second proofing. This was right before I rolled it out for pizza, so it's all puffy and beautiful.



The other dough recipe--it's half white whole wheat, half bread flour, and I skipped the seasoning and added about half the Parmesan. Turned out very tasty. We had eight people in the house, so four pizzas was a good number.



Homemade pizza sauce! This recipe is super easy--6 oz. can of tomato paste, a cup of warm water, and a bunch of spices. We double it, of course. This is plenty for the four pizzas, and I had some left over, too.



Pizza! This one had onions and pineapple on it for toppings. For the four pizzas, I used one can of pineapple tidbits, most of a small onion, a small bag of pepperoni, and one slice of deli ham, as well as a double-size bag of mozzarella cheese. All in all, a pretty cheap dinner for eight people, and just as good as most pizza places, if I do say so myself. Miles better than frozen, that's for sure.

I don't care what people say about fruit on pizza, I just love pineapple. My favorite homemade pizza that I made for myself so far had fresh pineapple, onion, and garden-fresh green pepper pieces. Fantastically good.



While the pizza dough was rising, I also made a big recipe of granola for my family. This isn't sugar-free, but I make my own sugar-free granola, too, using applesauce and agave nectar for sweetener. This stuff is still relatively healthy, though. All kinds of good ingredients in there.

I told my mom that for Christmas I want a pizza peel and a bigger pizza stone. The one I have is adequate, but it's only twelve inches, and sometimes I roll out the dough too big and have to scrunch it when I go to put it on the stone. Good stones are kind of expensive, though, so we'll see what I get.

Baking DOES make me happy, though. :) Even if my feet are really sore right now.
